CUCUMBER WHITE CUCUMBERS FRESH
The Cucumber White. Have you ever tried white cucumbers? Summer is the perfect time to experiment with these stunning salad favorites. Two common cucumber plant problems that cause white fruit are blanching and excessive moisture. Blanching occurs when the fruit is completely covered by leaves. Cucumbers need sunlight to develop and maintain their green color.
It’s best not to eat diseased white cucumbers. Those that are white because of blanching or too much rain are safe to eat, although nutrient deficiencies may result in a significant loss of flavor. There are just 16 calories in a cup of cucumber with its peel (15 without). You will get about 4 percent of your daily potassium, 3 percent of your daily fiber and 4 percent of your daily vitamin C. They also “provide small amounts of vitamin K, vitamin C, magnesium, potassium, manganese and vitamin A,”
Green Cucumber vs White Cucumber
When choosing between a standard green cucumber and an ivory white cucumber the difference can seem to be only skin deep.
Some fans report that small white cucumbers can taste sweeter, while others report a more sour or bitter flavor when it comes to the larger white cucumbers.
But as with all fruit and vegetables, it’s always best to try before cooking, to balance any acidity or bitterness.
White Cucumber Varieties
The White Wonder, otherwise known as Albino, Ivory King, Jack Frost, Landreths White Slicing or the long white is an heirloom variety introduced in 1893.
What does white cucumber taste like? White cucumber tastes a little bit different from the green cucumber. The white cucumber was really crispy and had sour notes as if it was sprinkled with lemon juice. I really liked the taste of a white cucumber and we enjoyed many more white cucumbers from that plant through the end of the summer.

But this variety is not intended for canning, this cucumber is for salads, I missed it. It is bitter-free like “Vodopad” Russian variety: first days it is bitter, and when it is ready to be plucked, it is bitter-free. It would be more suitable to order “Mini white” variety to be white and for canning.

Vacuum packing is a method of packaging that removes air from the package prior to sealing. Shrink film is sometimes used to have a tight fit to the contents. Vacuum packing reduces atmospheric oxygen, limiting the growth of aerobic bacteria or fungi, and preventing the evaporation of volatile components.
